He picked us up in front of our hotel and showed us the market of Sousse, where we bought the ingredients for the meals. This part already feels like a guided tour and we enjoyed it very much. Afterwards we got to his house where we met his lovely wife. Together we prepared the food and learned about the different cooking techniques. Once the food was ready we would eat together and talk. It really makes you feel like you are a guest which adds a lot to the experience. Please make sure you skip breakfast, because you will be fed plenty of great food!We debated between this and a city tour and we couldn't be happier about our choice. He drove with us through many small streets to bring us closer to Tunisian life. We visited the Old Town Market with him, where we bought ingredients for cooking and eating together.Afterwards he drove us to his house, which exceeded our expectations.We were warmly welcomed as friends with a Tunisian breakfast.( Tip: don't eat too much breakfast in the hotel. There is plenty to eat)Then we started cooking. Despite little knowledge of English, on our part, everything worked fine. The real Tunisia from hidden Medina Secrets to discovering the real food Tunisians eat at home. This was my 6th trip to Tunisia, the 1st being 40 years ago and I have toured most of the country and seen many of the sights both historic and film related. This was to be something completely different and being a foodie and amateur cook, I could not wait.Being met by Nabil after excellent communications during booking and over several months, was like meeting an old family friend you had not seen for a while. We headed for Sousse, to the Medina to discover its hidden secrets, areas that your typical tourist never ventures into. Narrow alleyways, men with Shisha Pipes drinking oil black coffee, the senses were swamped with sounds, aromas, the banging of hammers making imprints into copper plates it was like stepping back into history.The day was going to be a solo one with me, Nabil and his lovely wife, who is a professional chef specialising in pastry but also capable in all food related areas. We parked up and going through some traditional Tunisian fare, we discussed options and for me, Kafteji and Ojja, with Brik thrown in as it was something I really wanted to have a go it. This was to form our shopping list for the morning and where we needed to venture in the old Medina.Once we had completed shopping we headed home for some refreshment, proper Tunisian coffee lightly scented with Rose Water, some Extra Virgin Olive Oil, Harissa and Bsissa, a mixture of ground chickpeas and other pulses, mixed with olive oil and some crumbles Pistachios. Bread was used as a vessel and very tasty it all was too. We were soon in the kitchen preparing the main dishes. Each one was explained in detail by Nabil, including the subtle nuances that are hidden away in family kitchens.After a few hours of chopping, blending, frying, boiling and mixing we sat down for a traditional Tunisian feast, it was delicious.The whole day was truly fantastic, an experience you won’t get from your typical holiday company brochure.I would highly recommend Tunisian Flavours, the whole process from booking to collection to delivery was delivered with professional courtesy, but with the feeling of being part of an extended Tunisian family. Nabil and his wife were incredibly kind, warm, and welcoming, making us feel at home right away. A table with traditional dish, very beautiful. I was alone as a guest and everything was done with will and sympathy, like in a family house or friends. We went to the market to make some shopping at Mohamed's well-known sites, with many stories... The recipes are quite Mediterranean - but beware of the spices!
